Summer!

When you close your sweet little eyelids and think of summer–what comes to mind? Do you think of the pool? Or the beach? Do you think of the sound of cicadas? The smell of freshly cut grass? Orrrr… do you think of your clothes sticking to your back while your pit stains growing wider and wider? That last one… too REAL.

I think of lots of things…. but most importantly, I think of what I’ll be drinking. Iced teas, iced coffees, milk shakes, lemonades, rosé wine, sangria… All while lounging & relaxing. And these simple syrups will help get my drinking game ON POINT.

Can I share a secret with you? The simple syrup secret.
 
Simple syrups are….sugar and water. That’s all. In equal parts. Literally couldn’t be simpler. Simply put, the syrups are simple, BUT they are GAME. CHANGERS.
 
So when I was craving a little DIY project that wouldn’t require much time, cleanup, energy or effort—I made three simple syrups that have totally rocked my world!

First up, rosemary simple syrup. Rosemary is a powerful earthy, woodsy herb. It’s chilling side by side with cilantro on my favorite herb list. When combined with sugar and water, it creates a syrup with a subtle complexity that takes all drinks to the next level. I’ve already created a fabulous cocktail with this one that is coming soon!

Strawberry simple syrup! THIS. SYRUP. DANG. I’ve already used most of it. It’s sweet, a little tangy, and adds the most beautiful color to everything. It goes great in lemonade, iced tea, cocktails…the whole nine yards.

Last in the lineup—brown sugar ginger simple syrup. Say that 5 times fast. This one is the most unique. It’ll make your taste buds do a happy dance. The brown sugar adds a robustness while the ginger packs a quick but solid spicy-punch. It’s goooood. It’s good with bourbon, rum, and even coffee. Yes. please.

Simple Syrups

Rosemary Simple Syrup
  1. 2 cups water
  2. 2 cups sugar
  3. 8-10 sprigs of rosemary
Strawberry Simple Syrup
  1. 2 cups water
  2. 2 cups sugar
  3. 1/2 pint strawberries, rinsed and chopped with stems removed
Brown Sugar Ginger Simple Syrup
  1. 2 cups water
  2. 2 cups brown sugar
  3. 1/3 cup ginger, peeled and diced
Rosemary Simple Syrup
  1. In a medium saucepan over medium-high heat, combine water and sugar. Bring to a boil. Stir until sugar has dissolved. Take the saucepan off the heat and add the rosemary. Put the lid on the pan and let rest for 10-15 minutes. Strain syrup into container with a funnel.

  1. In a medium saucepan over medium-high heat, combine water, sugar and strawberries. Bring to a boil. Reduce heat to a simmer. Stir often until sugar has dissolved and strawberries have released most of their color. Take the saucepan off the heat and let cool for 10-15 minutes. Strain syrup into container with a funnel.

  1. In a medium saucepan over medium-high heat, combine water, brown sugar and ginger. Bring to a boil. Reduce heat to a simmer. Stir often until sugar has dissolved and ginger has released most of its flavor--about 7-10 minutes. Take the saucepan off the heat and let cool for 10-15 minutes. Strain syrup into container with a funnel.
Notes
  1. This recipe can easily be halved, doubled or scaled to preference.
